Triple Berry Biscuit Cobbler
- About 3 cups of frozen berries, defrosted
- 1/2 cup of sugar
- 1 teaspoon of vanilla
- 1/4 cup of cornstarch
- 1/2 teaspoon of salt
- 2 tablespoons of lemon juice
- 1 package of refrigerator biscuits
- 1 Egg
- Raw Sugar
- In a large bowl, combine the berries, sugar, vanilla, salt, cornstarch, and lemon juice until well combined.
- Then, transfer to a sauce pot and cook over medium heat until thickened. Stir often so nothing sticks.
- Then, spoon the filling into a baking dish and top with biscuits (I split mine in half to ensure proper cooking of the biscuits.
- Using a pastry brush, brush egg wash on top of the biscuit and sprinkle sugar on top.
- Bake in a 350 degree oven for 10-14 minutes or until the biscuits are golden brown. Enjoy with whip cream or ice cream.
