Cucumbers with Ginger, Rice Vinegar, and Mint

Ingredients:

  • 2 1/2 pounds cucumbers, chopped
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup rice vinegar
  • 1 1/2 teaspoons fresh ginger, minced
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried crushed red pepper
  • 1/4 cup loosely packed fresh mint leaves, chopped
  • Freshly ground black pepper

Directions:

  1. Toss together cucumbers and salt in a large bowl, and let stand 5 minutes.
  2. Whisk together vinegar and next 3 ingredients.
  3. Pour over cucumber mixture; cover and chill 1 to 24 hours.
  4. Add mint, and toss to combine. Let stand 10 minutes before serving.
  5. Season with salt and pepper.
