Ingredients:
- 2 1/2 pounds cucumbers, chopped
- 1 1/2 teaspoons kosher salt
- 1/2 cup rice vinegar
- 1 1/2 teaspoons fresh ginger, minced
- 2 garlic cloves, minced
- 1/4 teaspoon dried crushed red pepper
- 1/4 cup loosely packed fresh mint leaves, chopped
- Freshly ground black pepper
Directions:
- Toss together cucumbers and salt in a large bowl, and let stand 5 minutes.
- Whisk together vinegar and next 3 ingredients.
- Pour over cucumber mixture; cover and chill 1 to 24 hours.
- Add mint, and toss to combine. Let stand 10 minutes before serving.
- Season with salt and pepper.
