Triple Berry Biscuit Cobbler

 

  • About 3 cups of frozen berries, defrosted
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla
  • 1/4 cup of cornstarch
  • 1/2 teaspoon of salt
  • 2 tablespoons of lemon juice 
  • 1 package of refrigerator biscuits
  • 1 Egg
  • Raw Sugar

 

  1. In a large bowl, combine the berries, sugar, vanilla, salt, cornstarch, and lemon juice until well combined.
  2. Then, transfer to a sauce pot and cook over medium heat until thickened. Stir often so nothing sticks.
  3. Then, spoon the filling into a baking dish and top with biscuits (I split mine in half to ensure proper cooking of the biscuits.
  4. Using a pastry brush, brush egg wash on top of the biscuit and sprinkle sugar on top.
  5. Bake in a 350 degree oven for 10-14 minutes or until the biscuits are golden brown. Enjoy with whip cream or ice cream.
